Alrighty - we've got some homemade mac-n-cheese, sliced strawberries and jicama and avocado salad with a squeeze of lime.
To make the mac-n-cheese - I chopped about a tablespoon of vidalia onion, and sauteed it in half a stick of butter in the bottom of a large sauce pan. Then I added in four cups of whole milk, and dumped in an entire one pound package of macaroni. I simmered the whole mess for 12 minutes, stirring every minute or so and then checked it to see if it was tender. Then I dumped in about a cup of grated mild cheddar cheese and stirred it up with the heat off. Salt and pepper to taste. This is also good with grated nutmeg, but we didn't do that this time.
While I was cooking the noodles, I peeled and diced half a large jicama, and then diced two avocados. I sliced a lime, and squirted it, and added a little salt and pepper. This would have been good with fresh cilantro, corn kernels and something like chopped cherry tomatoes or red bell pepper, but it was great just like this. Very refreshing.
That's about four sliced strawberries. I think that's pretty self explanatory.
