The secret to good breakfast potatoes is apparently to pre-boil the potatoes. I have made mediocre hash browns and pretty much every type of breakfasty potato for my entire cooking career - but thanks to some cooking show I wasn't paying much attention to, I learned you should boil up a few russets, or in this case, red potatoes, before frying in oil.
