Tortilla Soup

Tortilla Soup

Okay! This was really delicious. Into a large saucepan, I put:

1 box of organic chicken broth
2 cups of water
About 10 thickly sliced baby carrots
one rib of celery, sliced
one tomato, diced
one half of a red bell pepper, large diced
one half of a sweet onion, diced
three crushed and chopped cloves of garlic
a handful of corn kernals
chopped cilantro
leftover turkey from Thanksgiving
three corn tortillas, sliced into strips.

In the cooking, the tortillas, which I didn't fry or anything, sort of disolved into tiny pieces. I didn't care, the kids didn't care, but maybe add them last if you want to actually SEE the tortilla in the finished soup.

I topped the soup with slices of avocado and more cilantro.

The entire family ate it up like crazy.
