This is my totally inauthentic version of bruchetta. Actually, it's my friend Elise's version.
I sliced a baguette about 1/2 thick, and put the slices on a cookie sheet. I drizzled them with extra virgin olive oil, added a little bit of chopped garlic on each one. Then I chopped a couple of plum tomatoes, a few slices of vidalia onion and about five large basil leaves, and mixed them all together with a little balsamic vinegar and olive oil.
I threw this mix on top of the bread, and threw the whole thing under the broiler for a few minutes. When they came out, I quickly grated some parmesean over them. I gave each person two.
Just yum. I could eat this every day.
